  • 1 pound ground beef (or turkey for a lighter option) Can substitute turkey for a lighter option.
  • 1 cup dried cranberries
  • 1 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup cranberry sauce Store-bought or homemade.
  • 1/2 cup barbecue sauce Adds a zing!

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, cranberries, chopped onion, garlic powder, black pepper, and salt. Mix until well combined.
  3. Roll the mixture into bite-sized meatballs (about 1 inch). Place them on a baking sheet with space between each.
Baking
  1. Bake the meatballs for 15-20 minutes or until golden brown and cooked through.
Saucing
  1. In a saucepan, stir together cranberry sauce and barbecue sauce over medium heat. Allow it to simmer.
Serving
  1. Once baked, toss the meatballs gently in the sauce to coat and serve warm, garnished with fresh parsley if desired.

Notes

Make-ahead option available; store in the fridge for up to 3 days. Leftovers can be frozen.
