For the Assembly
  • 1 cup brewed coffee, cooled Optional splash of coffee liqueur for added flavor
  • 12 pieces ladyfinger cookies Use quickly dipped in coffee
  • 1 cup fresh raspberries Plus extra for garnish

Method
 

Preparation
  1. In a mixing bowl, beat the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
  2. Pour cooled coffee into a shallow dish and quickly dip each ladyfinger into the coffee, ensuring not to drown them.
Layering
  1. Place the dipped ladyfingers in a single layer at the bottom of your serving dish.
  2. Spoon half of the creamy mixture over the ladyfingers, then sprinkle half of the fresh raspberries over the cream.
  3. Repeat the layering process with the remaining ladyfingers, cream mixture, and raspberries.
Chilling
  1. Cover with plastic wrap and let it chill in the refrigerator for at least 4 hours, or overnight if possible.
Serving
  1. Dust the top with cocoa powder, garnish with extra raspberries, and serve.

Notes

For an elegant touch, let the dessert chill overnight. Consider using strawberries or blueberries if you prefer.
