Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the pancake mix, milk, and egg. Whisk until smooth.
- Add the crumbled sausage, shredded cheese, and maple syrup to the batter.
- Add the baking powder and a pinch of salt, then mix until just combined.
- Grease a muffin tin with non-stick spray or butter.
- Pour the batter into each muffin cup, filling them about ¾ full.
- Bake for 15–20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
- Let them cool for a couple of minutes, then remove from the tin.

Make these ahead of time and store in the fridge or freezer. Experiment with flavors like jalapeños or spinach for added fun!
