Ingredients
  

For the batter
  • ¾ cup pancake mix store-bought or homemade
  • 1 cup milk
  • 1 piece egg
  • 1 cup cooked sausage, crumbled turkey sausage can be used for a lighter option
  • ½ cup shredded cheese cheddar or your favorite kind
  • 1 teaspoon maple syrup optional for sweetness
  • 1 teaspoon baking powder for fluffiness
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the pancake mix, milk, and egg. Whisk until smooth.
  3. Add the crumbled sausage, shredded cheese, and maple syrup to the batter.
  4. Add the baking powder and a pinch of salt, then mix until just combined.
  5. Grease a muffin tin with non-stick spray or butter.
  6. Pour the batter into each muffin cup, filling them about ¾ full.
  7. Bake for 15–20 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Let them cool for a couple of minutes, then remove from the tin.

Notes

Make these ahead of time and store in the fridge or freezer. Experiment with flavors like jalapeños or spinach for added fun!
