  • 1 piece pre-made pie crust Frozen pie crust is recommended.
  • 1 cup mixed vegetables (bell peppers, spinach, zucchini) Use whatever vegetables you have on hand.
  • 4 eggs eggs
  • 1 cup milk Any milk or milk alternative can be used.
  • 1 cup shredded cheese (Swiss or cheddar) Cheese can be adjusted based on preference.
  • to taste Salt and pepper
  • optional herbs (thyme or parsley) For added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using a frozen pie crust, let it thaw while prepping other ingredients.
  3. In a skillet, add a splash of oil and sauté your mixed vegetables until tender, about 5-7 minutes.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper, adding in any dried herbs you like.
  5. Layer the sautéed veggies into the pie crust, pour the egg mixture over them, and sprinkle cheese on top.
Baking
  1. Bake the quiche in the oven for about 35-40 minutes, or until the center is set and the top is golden brown.
  2. Allow it to cool for 10 minutes before slicing.

Notes

Feel free to make in advance and store in the fridge. It’s good for 3-5 days and can be reheated in the microwave or oven. Don't worry if you’re missing an ingredient—the recipe is flexible.
