Preparation and Baking
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat the softened butter and powdered sugar until light and fluffy.
- Pour in the vanilla extract and mix thoroughly. Add the chopped nuts and combine.
- Gradually stir in the flour and salt until just combined.
- Roll the dough into one-inch balls and place them on a lined baking sheet.
- Bake for 12-15 minutes or until lightly golden.
- Roll the warm cookies in powdered sugar and let them cool completely on a wire rack.
Notes
Chill the dough for about 30 minutes for easier handling and fluffier cookies. For a nut-free version, omit the nuts or use mini chocolate chips. Store cookies in an airtight container at room temperature for up to a week. Unbaked dough can be frozen for up to three months. Bake straight from frozen, adding an extra minute or two to the baking time.
