  • 8 oz egg noodles Use your favorite type of egg noodles.
  • 1 lb ground beef or turkey Substitute with plant-based meat if desired.
  • 1 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup Opt for a healthier version if preferred.
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese Cheese enhances the flavor of the bake.
  • 2 tbsp chopped chives Optional for garnish.
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the egg noodles according to package directions until al dente, about 5-7 minutes. Drain and set aside.
  3. In a large skillet, brown the ground meat over medium heat until cooked through, approximately 6-8 minutes. Drain any excess fat.
  4. In a large bowl, combine the sour cream, cream of mushroom soup, cottage cheese, and half of the cheddar cheese. Mix well.
  5. Stir in the cooked noodles and browned meat into the creamy mixture. Add salt and pepper to taste.
  6. Pour the mixture into a greased 9x13 inch baking dish and spread it evenly.
  7. Top with the remaining cheddar cheese and chives.
  8. Bake for about 30 minutes, until the cheese is bubbling and golden.

Notes

Make it ahead by preparing a day in advance and storing in the fridge. You can also substitute different cheeses or use sautéed veggies for a vegetarian version.
