Preparation
- Preheat your oven to 350°F (175°C).
- Cook the egg noodles according to package directions until al dente, about 5-7 minutes. Drain and set aside.
- In a large skillet, brown the ground meat over medium heat until cooked through, approximately 6-8 minutes. Drain any excess fat.
- In a large bowl, combine the sour cream, cream of mushroom soup, cottage cheese, and half of the cheddar cheese. Mix well.
- Stir in the cooked noodles and browned meat into the creamy mixture. Add salt and pepper to taste.
- Pour the mixture into a greased 9x13 inch baking dish and spread it evenly.
- Top with the remaining cheddar cheese and chives.
- Bake for about 30 minutes, until the cheese is bubbling and golden.
Notes
Make it ahead by preparing a day in advance and storing in the fridge. You can also substitute different cheeses or use sautéed veggies for a vegetarian version.
