  • 1 jar (16 oz) pepperoncini peppers (with juice)
  • 1 packet ranch dressing mix
  • 1 cup chicken broth
  • 1 tablespoon olive oil

Preparation
  1. Start by seasoning the chicken breasts with salt and pepper.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Once hot, add the seasoned chicken breasts and sear for about 5 minutes on each side until golden brown.
  3. Sprinkle the ranch dressing mix over the chicken, then pour in the chicken broth along with the jar of pepperoncini peppers and their juices.
  4. Bring the mixture to a boil, then reduce the heat and cover. Allow it to simmer for 20-25 minutes or until the chicken is tender and cooked through.
  5. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  6. Once the chicken is cooked, serve it up hot over rice, pasta, or alongside some crusty bread.

Notes

You can substitute ranch dressing mix with a homemade mix using dried herbs like parsley, dill, and onion powder. For a lighter option, swap out the chicken for turkey or a plant-based protein.
