Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • cup granulated sugar
  • 0.5 cups unsalted butter, melted
For the cheesecake layer
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup whipped topping (like Cool Whip)
  • 1 tsp vanilla extract
For the strawberry layer
  • 2 cups fresh strawberries, sliced
  • ¼ cup granulated sugar (for macerating)
For the topping
  • Extra whipped topping, for garnish Optional: additional sliced strawberries for decoration

Preparation
  1. In a bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture evenly into the bottom of a 9×13-inch dish. Put it in the fridge to chill.
  2. In another bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar, mixing until well blended. Then fold in the whipped topping and vanilla extract until combined.
  3. Once the crust has set in the fridge (about 10 minutes), spread the cheesecake mixture evenly over the crust.
  4. Combine the sliced strawberries and granulated sugar in a bowl. Let them sit for about 10-15 minutes, or until juicy.
  5. Spoon the macerated strawberries over the cheesecake layer.
  6. Chill your Strawberry Cheesecake Lush in the fridge for at least 2 hours before serving. Garnish with whipped topping and additional strawberries if desired.
  7. Cut into squares, serve, and enjoy!

Notes

This dessert can be made a day in advance, and feel free to swap strawberries for blueberries or raspberries. For a creamier layer, consider adding an extra ounce of cream cheese or a splash of lemon juice.
