- In a large skillet over medium heat, add the olive oil and allow it to warm up.
- Toss in the diced onion and garlic, sautéing until they turn golden brown and fragrant.
- Stir in the sliced carrots and continue to cook for about 5 minutes, until they soften.
- Add the turkey kielbasa and let it brown for 5-7 minutes.
- Add the chopped cabbage, smoked paprika, caraway seeds (if using), salt, and pepper. Stir, cover, and cook for about 10 minutes until the cabbage is tender.
- Taste and adjust seasoning as necessary. Serve warm.
Notes
This dish works well as a leftover, stored in an airtight container in the refrigerator for up to 3 days. Feel free to substitute with regular kielbasa or other vegetables.
