  • 2 cups cooked chicken, shredded Leftover rotisserie chicken works great!
  • 1 cup cucumber, diced Peeling optional.
  • 1 cup cherry tomatoes, halved
  • 1 piece bell pepper, chopped Red or yellow for added color.
  • 1/4 cup red onion, finely chopped Can substitute with green onion for milder taste.
Tzatziki Sauce
  • 1/2 cup plain Greek yogurt The star ingredient!
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped Or 1 teaspoon dried dill.
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by combining the Greek yogurt, olive oil, lemon juice, dill, salt, and pepper in a bowl. Whisk until blended.
  2. In a large mixing bowl, add shredded chicken.
  3. Toss in diced cucumber, cherry tomatoes, bell pepper, and red onion.
  4. Pour the tzatziki sauce over the chicken and vegetables. Mix gently but thoroughly.
  5. If time allows, let the salad chill in the fridge for 15-30 minutes before serving.

Notes

This salad is perfect for meal prep and can be made ahead of time. Store leftovers in an airtight container for up to 2-3 days. Feel free to substitute cucumber with zucchini or celery. Enjoy with fresh mint or parsley if you prefer over dill.
