- In a medium pan, heat the olive oil over medium heat.
- Toss in the spinach and sauté until it wilts down, about 2-3 minutes.
- Add the shredded chicken (or tofu) to the pan and mix well. Let everything heat through for about 5 minutes.
- Stir in the cream cheese, garlic powder, salt, and pepper. Allow it to melt and form a creamy sauce.
- Add the cauliflower rice and stir until heated through and coated in the sauce, about 5 minutes.
- Dish it out into bowls and add extra pepper on top if desired.
Notes
For added flavor, consider topping with Parmesan cheese while hot or adding red pepper flakes for a spicy kick. Measurement of spices can be adjusted to personal preference.
