Ingredients
  

Main Ingredients
  • 2 cups cauliflower rice Use fresh or frozen cauliflower rice.
  • 1 cup shredded chicken Can substitute with tofu.
  • 1 cup spinach Fresh spinach is recommended.
  • ½ cup cream cheese For a creamy texture.
  • 1 tsp garlic powder Adjust according to preference.
  • Salt and pepper To taste.
  • 1 tbsp olive oil For sautéing.

Method
 

Preparation
  1. In a medium pan, heat the olive oil over medium heat.
  2. Toss in the spinach and sauté until it wilts down, about 2-3 minutes.
  3. Add the shredded chicken (or tofu) to the pan and mix well. Let everything heat through for about 5 minutes.
  4. Stir in the cream cheese, garlic powder, salt, and pepper. Allow it to melt and form a creamy sauce.
  5. Add the cauliflower rice and stir until heated through and coated in the sauce, about 5 minutes.
  6. Dish it out into bowls and add extra pepper on top if desired.

Notes

For added flavor, consider topping with Parmesan cheese while hot or adding red pepper flakes for a spicy kick. Measurement of spices can be adjusted to personal preference.
