Celebrate St. Patrick’s Day with this festive Brownie Trifle—layers of rich chocolate brownies, creamy mint pudding, and fluffy whipped topping. A deliciously fun dessert for any gathering!


Ingredients:

For the Brownies:

  • 1 box (18 oz) chocolate brownie mix (or homemade brownies)

  • Ingredients required for the brownie mix (eggs, oil, water)

For the Mint Pudding Layer:

  • 1 box (3.4 oz) instant vanilla pudding mix

  • 2 cups cold milk

  • 1/2 teaspoon peppermint extract

  • Green food coloring (a few drops)

For the Whipped Topping:

  • 2 cups heavy whipping cream

  • 2 tablespoons powdered sugar

  • 1/2 teaspoon vanilla extract

For Garnish:

  • 1/2 cup mini chocolate chips

  • Green sprinkles

  • Crushed mint candies or Andes mints (optional)

Directions:

  1. Prepare the Brownies:

  2. Make the Mint Pudding:

    • In a mixing bowl, whisk together the vanilla pudding mix and cold milk until smooth.

    • Stir in peppermint extract and a few drops of green food coloring. Chill for 10 minutes until thickened.

  3. Whip the Cream:

    • Using an electric mixer, beat heavy cream, powdered sugar, and vanilla extract until soft peaks form. Set aside.

  4. Assemble the Trifle:

    • In a large trifle dish (or individual cups), layer 1/3 of the brownie cubes at the bottom.

    • Spread 1/3 of the mint pudding over the brownies.

    • Add a layer of whipped topping.

    • Repeat layers until all ingredients are used, finishing with whipped topping.
